Portuguese Garlic-Wine Marinated Pork Ribs (Oven Baked)

These pork spare ribs are the kind of dish that make you stop in your tracks and just appreciate good, honest cooking. You take two beautiful racks, rub them down with that deep red pimento paste, toss in plenty of garlic, a bay leaf, and let the white wine and olive oil work their magic. After a good rest in the marinade, the oven takes over, slowly roasting everything until the edges caramelize and the kitchen smells like a Sunday back home. The ribs come out tender, richly seasoned, and dripping with a sauce that begs to be mopped up with bread. It’s the type of comforting, no-fuss meal that makes any cook feel proud and any family feel spoiled. Simple ingredients, big flavor — the way ribs should be.
