Ingredients
1 medium whole orange3 medium eggs1 sweetened plain yogurt (about 125 g / ½ cup)1 tablespoon olive oilA pinch of salt200 g all-purpose flour (about 1⅔ cups, added gradually)15 g baking powder (about 1 tablespoon)Oil for fryingGranulated sugar, for dusting
Preparation
- Wash the orange very well.
- Peel off the zest in strips, being careful not to include the white pith.
- Remove and discard all the white pith from the orange.
- Place the orange segments and the zest strips into a blender.
- Add the yogurt, eggs, olive oil, and a pinch of salt and blend until smooth.
- Sift the flour together with the baking powder and add it gradually to the mixture.
- The amount of flour is approximate and depends on the size and juiciness of the orange.
- Add flour little by little until you get a batter that is neither too runny nor too thick.
- Heat oil in a frying pan over medium heat.
- Using a spoon, drop spoonfuls of batter into the hot oil and fry until golden on both sides.
- Remove and drain on paper towels.
- Dust with sugar before serving.
