1 kg cleaned shrimp (about 2.2 lb)2 medium onions, chopped2 cloves garlic, minced1/2 cup chopped cilantro (about 8 Tbsp)5 Tbsp olive oil (about 75 mL)1 package cream cheese (typically about 200 g / 7 oz)1 package grated Parmesan (typically about 100 g / 3.5 oz, or to taste)6 Tbsp tomato pulp/passata (about 90 mL)1 cup béchamel sauce (about 240 mL)Salt and pepper

Preparation

  1. In a large skillet, heat the olive oil.
  2. Sauté the onion and garlic.
  3. Add the shrimp and the tomato pulp, and let it cook for a little bit, seasoning with salt and pepper.
  4. Add the béchamel sauce, cream cheese, and cilantro, stirring well until creamy.
  5. Transfer the mixture to a baking dish.
  6. Sprinkle grated Parmesan on top and bake until golden on top (round 200°C / 400°F for 10–15 min, just until browned).
