Ingredients
12 oz (about 2 ¼ cups) carrots, chopped3 ¼ cups (13 oz) all-purpose flour2 cups (17 fl oz) water5 tbsp (2.5 oz) unsalted butter6 large eggsSalt, to tasteSugar, for dustingGround cinnamon, for dustingVegetable oil, for frying
Preparation
- In a saucepan, bring the water to a boil and season with a little salt.
- Add the chopped carrots and cook for about 20 minutes, or until tender.
- Remove the carrots with a slotted spoon and transfer them to a bowl.
- Mash the carrots until smooth using an immersion blender or potato masher.
- In a separate saucepan, bring the water and butter to a boil.
- Add a pinch of salt and let it return to a boil.
- Add the flour all at once, stirring continuously until the dough pulls away from the sides of the pan and forms a smooth ball.
- Transfer the dough to a bowl and let it cool slightly.
- Add the carrot purée and one egg, mixing well.
- Beat in the remaining eggs one at a time until fully incorporated and the batter is smooth.
- Heat the oil over medium heat — it should be hot but not smoking.
- Using a dessert spoon, drop spoonfuls of the batter into the oil.
- Fry slowly on both sides until golden and puffed.
- Remove with a slotted spoon and drain on paper towels.
- Mix sugar and cinnamon to taste, then sprinkle over the fritters.
- Let them cool completely — they taste best once cooled.
