Preparation

  1. In a saucepan, bring the water to a boil and season with a little salt.
  2. Add the chopped carrots and cook for about 20 minutes, or until tender.
  3. Remove the carrots with a slotted spoon and transfer them to a bowl.
  4. Mash the carrots until smooth using an immersion blender or potato masher.
  5. In a separate saucepan, bring the water and butter to a boil.
  6. Add a pinch of salt and let it return to a boil.
  7. Add the flour all at once, stirring continuously until the dough pulls away from the sides of the pan and forms a smooth ball.
  8. Transfer the dough to a bowl and let it cool slightly.
  9. Add the carrot purée and one egg, mixing well.
  10. Beat in the remaining eggs one at a time until fully incorporated and the batter is smooth.
  11. Heat the oil over medium heat — it should be hot but not smoking.
  12. Using a dessert spoon, drop spoonfuls of the batter into the oil.
  13. Fry slowly on both sides until golden and puffed.
  14. Remove with a slotted spoon and drain on paper towels.
  15. Mix sugar and cinnamon to taste, then sprinkle over the fritters.
  16. Let them cool completely — they taste best once cooled.
