Ingredients
200g cod, cooked and shredded1/4 red bell pepper, finely chopped1 small onion, finely chopped2 stalks of chives, finely chopped (optional)Chopped parsley, to taste2 eggs1/2 small beer (about 100 ml / ⅓ cup + 1 tbsp)150g (1¼ cups) self-rising flourGround white pepper, to tasteSalt, to tasteOil, for frying
Preparation
- In a bowl, beat the eggs well with the beer and a pinch of salt.
- Add the shredded cod, red pepper, onion, chives (if using), parsley, and white pepper.
- Gradually mix in the flour until you get a thick, smooth batter.
- Heat plenty of oil in a deep skillet or pan.
- Spoon portions of the mixture into the hot oil and fry until golden brown on both sides.
- Drain the fritters on paper towels before serving.
