Ingredients
4 cups water (1 liter)1 cup fine or medium yellow cornmeal (150 g)1 tablespoon butter1 pinch of saltLemon peel (optional)Sugar and cinnamon, for serving
Preparation
- Bring the water to a boil with a pinch of salt and the lemon peel (if using).
- Once it begins to boil, reduce the heat to low.
- Slowly add the cornmeal in a thin stream, stirring constantly with a wooden spoon to prevent lumps.
- Cook gently for 10–15 minutes, stirring often, until it thickens.
- Remove from heat, stir in the butter until creamy.
- Serve hot, sprinkled with sugar and cinnamon to taste.
