Ingredients

4 cups water (1 liter)1 cup fine or medium yellow cornmeal (150 g)1 tablespoon butter1 pinch of saltLemon peel (optional)Sugar and cinnamon, for serving

Preparation

  1. Bring the water to a boil with a pinch of salt and the lemon peel (if using).
  2. Once it begins to boil, reduce the heat to low.
  3. Slowly add the cornmeal in a thin stream, stirring constantly with a wooden spoon to prevent lumps.
  4. Cook gently for 10–15 minutes, stirring often, until it thickens.
  5. Remove from heat, stir in the butter until creamy.
  6. Serve hot, sprinkled with sugar and cinnamon to taste.
