Ingredients
4 medium apples (about 500 g / 1 lb 2 oz)2 cups (500 g) plain yogurt3 eggs1/2 cup + 1 tbsp (120 g) sugar2/3 cup (75 g) cornstarchButter, for greasing the pan
Preparation
- Preheat the oven to 350 °F (180 °C) and grease a baking dish with butter.
- Peel, core, and dice 3 apples into small cubes.
- In a bowl, whisk the yogurt with the eggs.
- Add the sugar and cornstarch, mixing until smooth and lump-free.
- Gently fold in the diced apples.
- Pour the batter into the prepared baking dish and smooth the top.
- Slice the remaining apple thinly and arrange the slices on top.
- Bake for 30–35 minutes, until golden and set in the center.
- Allow to cool, then refrigerate for a few hours before serving..
Notes:
- Lightly dust the apple cubes with flour if they are very juicy.
- Add cinnamon or vanilla for extra flavor.
- Pairs beautifully with a berry coulis, a drizzle of honey, or a scoop of ice cream.
