Ingredients

4 medium apples (about 500 g / 1 lb 2 oz)2 cups (500 g) plain yogurt3 eggs1/2 cup + 1 tbsp (120 g) sugar2/3 cup (75 g) cornstarchButter, for greasing the pan

Preparation

  1. Preheat the oven to 350 °F (180 °C) and grease a baking dish with butter.
  2. Peel, core, and dice 3 apples into small cubes.
  3. In a bowl, whisk the yogurt with the eggs.
  4. Add the sugar and cornstarch, mixing until smooth and lump-free.
  5. Gently fold in the diced apples.
  6. Pour the batter into the prepared baking dish and smooth the top.
  7. Slice the remaining apple thinly and arrange the slices on top.
  8. Bake for 30–35 minutes, until golden and set in the center.
  9. Allow to cool, then refrigerate for a few hours before serving..

Notes:

  • Lightly dust the apple cubes with flour if they are very juicy.
  • Add cinnamon or vanilla for extra flavor.
  • Pairs beautifully with a berry coulis, a drizzle of honey, or a scoop of ice cream.
