Ingredients

500 g peeled shrimp (about 1.1 lb or 1 lb 2 oz)Juice of 1 lime6 garlic cloves, thinly slicedSalt and pepper, to taste1 chili pepper (fresh red or green, depending on your heat preference)Oil, as needed (e.g., vegetable or olive oil)1 tablespoon margarineFresh coriander, finely chopped, to taste

Preparation

  1. Season the shrimp with salt, pepper, and lime juice.
  2. Cover and refrigerate for at least 2 hours.
  3. Thread the shrimp onto large wooden skewers.
  4. In a large frying pan, heat a drizzle of oil with the chili pepper and sliced garlic.
  5. Cook over medium heat until the garlic starts to turn golden.
  6. Add the margarine and let it melt.
  7. Place the shrimp skewers in the pan and cook on both sides until the shrimp are done (pink and slightly charred).
  8. Sprinkle with finely chopped coriander and serve immediately.
