Ingredients
4 small apples2 eggs3/4 cup granulated sugar (150g)1/4 cup Port wine1/3 cup softened vegetable margarine (80g)3 tablespoons apple jam1 ½ cups all-purpose flour (180g)1 teaspoon baking powderShredded coconut, to taste
Preparation
- Preheat the oven to 350°F (180°C).
- Grease a round tart pan with margarine, line it with parchment paper, and grease the paper as well, and set aside.
- Peel and core the apples, finely chop two of them, slice the other two and set aside.
- In a large bowl, beat the eggs with the sugar until well combined.
- Add the Port wine, softened margarine, chopped apples, and apple jam, and beat again until smooth.
- Add the flour and baking powder and mix just until fully incorporated.
- Pour the batter into the prepared pan.
- Generously sprinkle with shredded coconut and arrange the apple slices randomly over the top.
- Bake for about 30 minutes, or until a toothpick inserted in the center comes out clean.
- Remove from the oven and let cool before serving.
