Ingredients
Dough:250 ml water (approximately 1 cup)250 ml milk (approximately 1 cup)1 pinch of salt4 tablespoons olive oil450 g all-purpose flour (approximately 3 1/2 cups)Breading:2 eggs300 g breadcrumbs (approximately 3 cups)Filling:400 g ground beef (approximately 14 ounces)Salt to taste3 tablespoons olive oil1/2 chopped onion2 crushed garlic cloves1 bay leaf3 slices of smoked chouriço2 peeled tomatoes4 tablespoons tomato paste3 tablespoons white wine3 tablespoons water
Preparation
Filling:
- Sauté the onion and garlic in the olive oil until lightly golden.
- Add the ground beef and cook until it loses its reddish color.
- Add salt, the crushed tomatoes, water, chouriço slices, white wine, and tomato paste.
- Let it cook until all the liquid is absorbed.
- Remove the chouriço slices and bay leaf, and let the filling cool.
Dough:
- In a saucepan, combine water, olive oil, milk, and salt and bring to a boil.
- Add the flour all at once, and stir vigorously over low heat until a ball forms that comes away from the sides of the pan.
- Place the dough on a countertop dusted with flour and knead it slightly until it cools.
- Roll out the dough thinly with a rolling pin.
Assembling:
- Cut circles of dough with a cutter, fill with the meat filling, and close and seal them (brush the edges with a little water so they stick together, if needed).
- Dip the rissóis in beaten egg, then in breadcrumbs.
- You can freeze them in plastic trays to keep them separated and ready to use.
- If you are going to cook them right away, place them in the refrigerator for 30 minutes, this will prevent them from opening up during the cooking process.
- Fry them in peanut oil until golden brown and enjoy.
