Delicious and Creamy Portuguese Sweet Rice Recipe

Ingredients

2 cups of water1 cup of short grain (arborio) rice2 cups of hot milk (whole works best)1 cup of sugar1 fresh lemon rind (use a vegetable peeler for big pieces for easier removal)Cinnamon2 egg yolks (optional)

Preparation

  1. Bring water to a boil in medium saucepan.
  2. Add rice and cover, simmering for 20 minutes.
  3. Add milk and lemon rind, stirring constantly until thickened to oatmeal consistency, about 15-20 minutes.
  4. It will also thicken some while cooling.
  5. Add sugar and stir well.
  6. Add 2 egg yolks slowly while mixing (optional).
  7. Pour into one large serving plate and remove lemon rind.
  8. Spread flat and allow to cool on wire rack.
  9. You can be decorative with cinnamon by pinching a bit between your fingers and place while your hand is no more than an inch away from the rice (criss cross patterns are traditional), or you can just dust the entire top with the cinnamon.
  10. Serve at room temp, but refrigerate uneaten portion.

    Hi Eddie, it should be noted that the rice should be cooked & soft before adding the sugar as once the sugar is added the rice, it stops the rice from cooking. This was taught to me by a Portuguese lady that was over 100 years old.

    Yes, My Mom taught me the same thing. Add sugar once you're happy with the texture of the rice as once you add the sugar the rice will stop cooking.

    The steps here differ from initial instructions to drain rice par cook . I’ve made but 2 cups milk make it a bit watery than I like , but the taste is there

    It’s a lovely dessert. You didn’t mention it here but a good reminder to tell people to temper the eggs before adding to pudding. The first time I made it was for after dinner, but this time we had it after breakfast!! I know. We are so greedy for the pudding no one in the family could wait for dinner time.

    It may not turn out the same, but you can try. Start by adding the rice to a pan over medium heat and skip to step 3, for the milk, add 1 and 1/2 cups and slowly add more if needed. Good luck and let us know how it turns out.

    For anyone interested this recipe can also be done all in an Instant Pot. 1. Cook rice and water on Porridge setting for 20 mins 2. Quick release 3. Turn on Saute feature, 4. Add milk, sugar, keep mixing for 20 mins 5. Turn off Instant Pot, add two whole beaten eggs while mixing quickly 6. Pour into serving dish, garnish with cinnamon and let settle for a few minutes before serving

    Just made this, and I am in heaven. A taste of my childhood! I substituted soya milk for the whole milk and 1/2 cup of honey for the white sugar. It turned out fantastic. Than you Eddie for posting so many wonderful and authentic recipes.

    I found that there is a Tastic arborio risotto rice... And Woolworths sells a risotto rice that is for rice pudding. It actually gives a stickier feeling therefore the creamier texture as well as taste.

    Arborio rice is high in amylopectin, a starch present in rice. Because it undergoes less milling than ordinary long-grain rice, arborio retains more of its natural starch content and you get a creamier result.

    In some cases people do, and for some recipes it's a good idea, but not for this one Maria, I would not wash it for rice pudding because it will end up creamier.

    I like this recipe but mine was very liquidy with the 4 cups of liquid if I had followed the time directions. I had to add another almost 40 minutes of coming time to make sure the rice was fully cooked and not too liquidy. Also, I think one cup of sugar is good if you like it extremely sweet, otherwise maybe 1/2 cup then add more if needed. I will definitely make this again and try to tweak it a bit.
