Portuguese Roasted Potatoes with Chouriço Recipe

These Portuguese roasted potatoes are a smoky, vinegary delight where the chouriço fat renders into a rich sauce, glazing every bite. This authentic recipe utilizes a traditional refogado base of onions and tomatoes, seasoned with pimentão doce (smoked paprika) and a splash of vinegar to balance the spice. It’s a hearty one-pan meal that captures the rustic essence of Portuguese comfort food.

PR, How do you think this would work out in a crockpot? Do you think the potatoes would get too mushy?

In my opinion this is not a good crock pot recipe, and yes because the potatoes would over cook, unless you put them in much later, but I think that defeats the purpose of using a crock pot.
