Do you need to use the lemon peel and zest?

You can skip that if you don’t want to use it.

What is a “water bath”—step 6? 6. Pour this preparation into the previously caramelized pudding form and bake in a water bath for about 50 minutes.

Place the pudding form inside a bigger pan filled half way with hot water and bake the pudding that way.

What kind of cream is to be used? Table cream, heavy cream? Half and half?

You can use anyone of them Stephanie, we use table cream, but you can use heavy for a richer pudding.

I would love to try it as it’s different to the one I used before. With condensed milk and lemon. But I don’t see how to do the caramel ?
