Ingredients

2.2 lbs (1000 gr) of flour1.65 lbs (750 gr) of sweet potatoes2 tablespoons (28 gr) of active dry yeast1 pinch of saltWater (150 ml)

Preparation

  1. Peel the potatoes, boil them in water and reduce them to puree.
  2. Add the yeast into a little water (aprox 150 ml) and add the salt as well.
  3. Place the flour on a clean surface, open a hole in the middle and place the sweet potatoes and yeast.
  4. Knead well and let the dough ferment for 2 to 3 hours.
  5. Divide the dough into small portions and flatten them (on a floured surface).
  6. Then cook the caco cakes on a hot skillet on both sides.

Suggestion: You can brush the cakes with garlic butter and sprinkle them with chopped parsley and a little salt.

    I had this in Funchal last week and can't wait to make it myself. Going to make it tomorrow evening for my garlic bread-loving granddaughters. In Funchal, they made it with oil for me, rather than butter, as I am a vegan 🥰 I will make it with vegan-friendly butter. I will update after I have made it.
